Chicken scallopini with mushrooms and broccoli rabe

Scallopini refers to thin slices of meat, usually chicken or veal, that are quickly pan-fried until golden. Here, chicken breasts are sliced horizontally to create thin, even pieces that cook in just a few minutes. They’re served with mixed mushrooms and broccoli rabe, sautéed in the same pan with garlic, lemon juice and lemon thyme for a simple, savoury finish.

Broccoli rabe is an Italian bitter green available from some greengrocers and markets. If you can’t find it, substitute cavolo nero or silverbeet.

Season chicken. Heat a large frying pan over high heat. Add half the oil and fry chicken, turning once, until golden and cooked through (3-4 minutes). Remove from pan and cover loosely with foil.

Add remaining oil to same pan over high heat. Add mushrooms and broccoli rabe, and sauté until mushrooms are golden and leaves have wilted (3-4 minutes). Add garlic and sauté until fragrant (1-2 minutes). Remove from the heat. Add lemon juice and thyme and stir to coat. Season. Serve chicken with mushroom mixture, drizzled with extra olive oil.
