Franciacorta, a drier, more Champagne-like sparkling wine from Lombardy, makes a refreshing alternative to prosecco. And while it sounds a bit recherché, a dash of yuzushu, a blend of sake and fresh yuzu juice, gives a Spritz a twist that's hard to pin down. (Kudos to Sydney wine bar 10 William St for the inspiration.)
- 40 ml Aperol
- 60 ml Franciacorta or prosecco
- Soda water
- Splash of yuzushu (optional; see note)
- Lemon slices and green olives, to serve
- 1Pour Aperol into a large wine glass or tumbler half-filled with ice. Top with Franciacorta or prosecco, soda water to taste, and a dash of yuzushu. Garnish with lemon wheels and green olives and serve with two straws.
Yuzushu is available at Dan Murphy's or Black Market Sake.
