“This is one of my favourite summer desserts. I also use it to make Bellinis. Simply lose the mint, peel and purée the fruit with the remaining ingredients and add a spoonful to a glass of sparkling.” - Andrew McConnell
- 3 each of yellow nectarines and white peaches, cut into wedges, stones removed
- 2 tbsp caster sugar
- 1 tbsp Cognac
- 1 tbsp mint leaves, thinly sliced, plus extra to garnish
- 1Combine ingredients in a bowl, cover with plastic wrap and stand for 1 hour to macerate.
- 2Transfer salad to a serving bowl, scatter with extra mint and serve with <a href="christmas_pudding_icecream.htm">Christmas pudding ice-cream</a>.
