“This is one of my favourite summer desserts. I also use it to make Bellinis. Simply lose the mint, peel and purée the fruit with the remaining ingredients and add a spoonful to a glass of sparkling.” – Andrew McConnell

1.Combine ingredients in a bowl, cover with plastic wrap and stand for 1 hour to macerate.
2.Transfer salad to a serving bowl, scatter with extra mint and serve with Christmas pudding ice-cream.
