If you enjoy espresso-style crema, this isn’t the maker for you. But it’s ideal for capturing nuances of the bright, fruity single-origin coffees currently in vogue. Invented in 1941, the Chemex is little more than an open-topped hourglass, elegant in its simplicity. Thick filter papers trap grind sludge, allowing water to drip through unhurriedly to create a brew that’s clear and without bitterness. It’s less of a faff than espresso, but the dose needs to be consistent – papers should be primed and the grinds need time to bloom – so it’s not exactly set and forget. With its good looks, though, it’s easy to see why it’s a hit with restaurants.
