As the de facto dining room of the five-star Sofitel Hotel, Pei Modern needs to be all things to all people. With top-flight Sydney chef Mark Best at the helm, though, this smart restaurant of concrete, glass and serious carpentry always keeps things savvy. The alcove bar is built for relaxed daytime dining, while the restaurant-proper comes into its own after dark. Sultry lighting, a bustling bistro feel and, under maître d' Ainslie Lubbock, upstanding service are enhanced by pukka cocktails and a five-star wine list (at five-star prices). The menu kicks off with show-stopping bites of shortbread topped with lush parmesan cream and anchovy; it often showcases seasonal treats such as a late-summer salad of burrata and black fig. Main courses steer steadily between pasta and wood-fired fish and meat, including the juiciest charred hanger steak with roasted shallots and harissa. Best's signature Sauternes caramel custard is the ideal finish.
