Hong Kong restaurant Mott 32 will open in Melbourne next year

It's the first Australian location of the celebrated Chinese restaurant.

Celebrated Chinese restaurant Mott 32 — which was founded in Hong Kong and now has locations in Vancouver, Singapore, Las Vegas, Dubai, Seoul and Toronto — will open in the growing Crown Melbourne precinct in March 2027.

“We’ve always positioned Mott 32 to show that Chinese cuisine belongs on the same stage as any cuisine in the world,” says Mott 32 founder Malcolm Wood. “Melbourne has been on our wish list for years thanks to its dynamic energy and global outlook.”

The modern Cantonese restaurant known best for its signature 42-day apple wood roasted Peking duck (carved tableside and considered some of the best in Hong Kong) will offer an array of dim sum, premium beef and seafood, and signature dishes like smoked black cod and Iberico pork char siu glazed with mountain honey, drawing on ingredients and styles from further regions including Shanghai and Beijing.

As part of Crown’s ongoing $200 million redevelopment of it Southbank precinct, waterside pub Bellevue Bar & Terrace will open later this year, with a grill by Victor Churchill and two venues by Las Vegas-based group Clique Hospitality — Amaya Modern Mexican and Barbershop Cuts & Cocktails — to launch in early 2028.
