This party-starting menu favourite at Ms.G’s. isn’t the only culinary mash-up that Dan Hong can teach you. The Mr Wong chef shows you how to expertly remix Western food with Asian flair: so give toothfish an upgrade with roasted char-siu flavours, while kingfish ceviche turns Vietnamese – thanks to lime juice, fish sauce and prawn crackers.

Matching wines, courtesy of Bird in Hand, include Bird in Hand’s 2018 Sparkling Pinot (paired with the kingfish ceviche), Bird in Hand’s 2019 Pinot Gris (enjoyed with the cheeseburger spring rolls) and Bird in Hand’s 2017 Syrah (for the roasted char-siu toothfish).
