A culinary hero is moving into Sydney’s eastern suburbs ahead of the next summer season, with the opening of Rick Stein at Coogee Beach. Best known for his seafood-focused fare, veteran chef Rick Stein is opening the new 224-seat restaurant with wife Sarah Stein at the beachfront Intercontinental Coogee Beach in November.

Comprising a signature restaurant, bar and courtyard terrace, the new spot will be Stein’s third in Australia, joining his existing restaurants in Mollymook on the NSW south coast, and Port Stephens, on the mid-north coast.

“Coogee Beach is yet another stunning coastal location for our Australian restaurant portfolio –  perched by the sea and full of the laid-back charm we’ve come to love so much here,” says Stein. “There’s an abundance of top-quality seafood in Australia and we’ll be championing local, seasonal produce with the benefit of accessing the biggest fish market in the southern hemisphere.”

With that in mind, we’re looking forward to a menu that showcases fruits of the ocean: perhaps mahi mahi and blue swimmer crab from Nelson Bay, Stockton pipis from Port Stephens and line-caught mackerel from Ulladulla.

Along with making the most of Sydney Fish Markets, this will be an opportunity to see more from producers Stein has collaborated with in Port Stephens and Mollymook. And while the menu is still in development, it will no doubt feature some of the dishes Stein has carved out as signatures over the years, including British-style fish and hand-cut chips with mashed peas; and bright and spicy Singapore chilli crab.

The restaurant is projected to open in November 2025, with Sarah Stein bringing her vision to the project via her publicity know-how and interior design guidance. This will be a key part of the recently announced Intercontinental Sydney Coogee Beach, which is currently undergoing a transformation from its previous incarnation as the Crowne Plaza. The hotel will include an impressive pool deck with panoramic views of Coogee Beach and a new spa and wellness facility alongside Rick Stein at Coogee Beach.
