This much-decorated restaurant in Victoria's north-east has been earning interest and acclaim since it opened a decade ago. Michael Ryan's fascination with Japan still shows in the Asian-inflected menu, while a recent refurb adding a long banquette has softened the austerity of the old bank's interiors. Cured kingfish comes with Chiu Chow chilli oil, mellowed by cucumber and buttermilk. Cauliflower is scattered with furikake. There's the blissful buzz of umami across the dishes, including the ruby-hued duck with radicchio, walnuts and a hint of black pudding. An aromatic rose-geranium cream, fig-leaf jelly and Stanley raspberries layered beneath bay-leaf meringue is a typically inspired dessert. Smart service shepherds you through a stellar wine list that marries local gems with sake and shochu. Provenance remains worthy of a journey, not just a detour.
