Broccoli and cauliflower Peruvian fried rice

This quick and easy Peruvian fried rice is the perfect meal to get your five serves of vegetables in.

1.Process cauliflower and broccoli in batches in a food processor until very finely chopped.
2.Heat half of the oil in a wok or large frying pan over high heat until smoking. Add egg and stir vigorously until dry and broken up (1-2 minutes); transfer to a plate.
3.Add remaining oil to wok with garlic and ginger and stir-fry until fragrant (30 seconds). Add beans with capsicum and stir-fry until starting to become tender (1-2 minutes), then add cauliflower and broccoli with soy sauce; stir-fry until cauliflower and broccoli starts to soften (2-3 minutes). Return egg to pan, season to taste with Maggi Seasoning, white pepper and lime juice.
4.Top with sesame seeds, spring onion and coriander, and serve with tomato salad and extra lime wedges on the side.

Maggi Seasoning is available from Asian grocers and select supermarkets. If unavailable, substitute dark soy sauce.
