There’s much to love about lasagne: layers of pasta, creamy besciamella (otherwise known as béchamel) and comforting ragù, and an abundance of cheese — be it parmesan cheese to mozzarella cheese.

A true lasagne should have a minimum of three layers of lasagna sheets. But for homemade lasagne, we’re to assemble lasagna and filling higher to create a layered pasta masterpiece.

If you’re looking for a classic lasagne recipe, turn to Matt Breen’s Mum’s lasagne, filled with a meat sauce of minced beef and pork, herbs, and a tomato sauce, plus a mornay sauce made cheddar cheese, milk and butter.
