In a world first, Champagne house Veuve Clicquot is taking over one of Australia’s most impressive outback luxury properties, Mt Mulligan Lodge in Far North Queensland.
The takeover brings the maison’s signature style, culinary partnerships and immersive experiences to the 28,000-hectare private property, located 160 kilometres north-west of Cairns. The all-inclusive, two-night experience (available for couples) or exclusive three-night, entire-property booking (for up to 28 guests) includes private helicopter transfers, Outback Pavilion accommodation and special gifts from Veuve Clicquot, as well as dining experiences bringing the magic of the iconic Champagne brand to the bush.
Beyond unique lodge experiences including ATV adventures, waterhole swimming, stargazing and a guided sunrise expedition, Veuve Clicquot Sun Escape at Mt Mulligan Lodge will treat guests to bespoke menus from the Lodge’s head chef Alex Muus, with dinner built around Queensland-sourced ingredients cooked on an open flame, paired with La Grande Brut 2018.
Melbourne architect-turned-chef Audrey Shaw (Carnation Canteen, Bar Carnation) is behind the daytime Le Picnic menu, which features Clicquot Yellow Label and ingredients sourced from the Northern Territory.
“We’re serving spaghetti with coral trout that’s actually marinated in the Champagne,” Shaw tells Gourmet Traveller. “It’s a technique that’s so luxurious, I could have only learned it at The River Café. You let the fish cure very gently in the Champagne and add lots of fresh herbs, like dill, and then cook it down with some garlic and chili. It’s absolutely delicious.”
