The wine list at Source, a hefty document featuring the best of the local wine regions, signals the owners' commitment. Tim and Michelle Foster invest heavily in relationships with local suppliers - beef tartare comes from pastures 15 clicks distant and the accompanying egg is from the restaurant's backyard chooks. The nearest thing to a signature dish, scallops with grilled corn, is a winning smoky-sweet entrée, while duck is rarely off the menu, appearing perhaps as a neck sausage with confit leg and cherries, just right for Kyneton's cool inland nights. Snapper with prawn tortellini and rouille tests the kitchen's precision, the fish over-firm, the pasta dough more so. Some desserts don't deliver - such as the bay-leaf crème caramel, which wants for bay-leaf flavour - but others, like a dark chocolate délice, deliver a classic sugar hit. Service is unfailingly warm and friendly. The bright dining room, suffused with 19th-century history, is perfect for long lunches.
