Source mixes sophistication with simplicity – that’s the impression that strikes you upon entering the restaurant’s stripped-back room. There’s a smart selection of art on the exposed-brick walls, a mix of modern Scandinavian furniture and, out the back, a garden filled with herbs and edible flowers. The staff are welcoming, as are the local flavours on offer, be they slivers of smoky coffee-crusted kangaroo matched with garlic cream, plum sauce, and parsnip chips, or sourdough with burnt beurre noisette. A zucchini soufflé with a balsamic reduction is comforting, pork belly and loin arrive with silvanberries and earthy beetroot, and barramundi with squid-ink pasta is teamed with crab dumplings in a vivacious bisque. Desserts might include an expertly balanced olive oil and Montenegro sponge with fig leaf ice-cream that lingers curiously and alluringly on your tongue (but in a good way).
