Returning for its ninth year as the principal partner of the Melbourne Cup (its 24th as a partner of the Victorian Racing Club), Lexus has revealed that local restaurateur Jason M. Jones will deliver an immersive hospitality experience at the exclusive Landmark by Lexus pavilion at Flemington across this year’s Melbourne Cup Carnival.
As culinary collaborator, Jones has developed a three-part experience built around the central concept of akebono: a Japanese expression referring to the “threshold of dawn, a fleeting moment of transition, possibility and renewal before sunrise”, nodding to Lexus’s Japanese roots.

On level one, both bar dining and a restaurant menu are on offer, blending the Gallic staples of Entrecôte with Lexus’s Japanese influence. Level three will host a more playful experience in line with Entrecôte sister venue Gigi, with oysters shucked to order, a tartare de boeuf station and colourful cocktails, accompanied by live vinyl DJs.
As well as Jones’s menus, the pavilion’s invite-only attendees will enjoy a sculptural dessert by pâtissier couple Hyo Ju Park and Rong Yao Soh of Melbourne’s Madeleine de Proust, crafted through 3D digital modelling, custom mould-making and refined pastry technique. It blends toasted grain ganache, kinako jelly, madeleine sponge and macadamia crunch. St Remio returns to serve signature coffee drinks, including a Dubai Mont Blanc topped with pistachio cloud.
