Line a large oven tray with baking paper. Place feta, graviera, jalapeño, spices, eggs, baking powder and cornflour in a large bowl. Season to taste and stir to combine. Divide mixture into 40 portions (30gm each) and roll into long ovals; place on prepared tray.
Combine egg and milk in a small bowl. Coat croquettes in flour, egg mixture, then crumbs, shaking off excess, ensuring they are well coated. Rest in fridge, covered, until firm (2 hours).
Heat vegetable oil in a deep frying pan or deep-fryer to 180ËšC. Deep-fry croquettes in batches, turning occasionally, until golden and crisp (3-4 minutes; be careful as hot oil will spit). Season to taste and serve hot with lemon wedges.
Graviera, a hard sheep’s milk cheese is produced in various parts of Greece, mainly Crete, Lesvos, Naxos and Amfilochia. It is similar to Gruyère.
