1.Heat oil in a wok over high heat until smoking, then add garlic and stir-fry until fragrant (20-30 seconds). Add lettuce, toss, then cover for 1 minute. Remove lid, toss lettuce again to combine and cover again until wilted (2 minutes). Add sauces, season with white pepper, toss to combine and serve.
