Inspired by Spain and Portugal without slipping into caricature, Iberia captures authenticity on the plate. The serious kitchen brigade concentrates on subtleties, best seen in dishes highlighting carefully sourced seafood and vegetables. Grilled perch fillet sits with peas, almond and fennel. Caldoso is rich and fulfilling, its deep, savoury broth augmented by chickpeas and diced vegetables. An equally serious focus on preserved meats, fish and vegetables is best tasted as a mixed plate – be sure to include 36-month paleta jamón Ibérico, and carrots pickled in honey and ras el hanout. Dishes arrive at scattered intervals rather than a rush, making for a pleasing shared meal – right through to a Portuguese custard tart. Drinks suit the menu, from Spanish and local wines to sherry and vermouth, or can be enjoyed over snacks in the basement bar. Still, it’s a tight fit in here, so be sure to book: Iberia is heaving like a Seville hotspot and you won’t want to miss out.
