REVIEW

Dinner and a show? You’ve come to the right place. The bling fest starts with your ascent skywards in a gilded mirror-walled elevator and it’s amplified when you disembark in the plush dining room with its wraparound triple-height glass walls, infinity pool and impressive two-storey wine cellar. Theatricality extends to both the food and service. Runners lift a smoke-filled glass cloche to uncover plump mussels sans-shells, arrayed in a poulet Basquaise broth decanted at the table. Precisely handled quail is a dish of two parts, the bird’s legs, feet attached, arriving separately, the meat glossed in a rich demi-glace. A slab of slow-roasted rib fills its plate and 50:50 butter mash provides a suitably luxe pairing. Dessert expands the more-is-more leitmotif – citrus tart comes embellished with a tracery of gold-dusted meringue. Gold Coast gold standard.
