Technically speaking, Post is a hotel restaurant. But when the hotel in question, Como The Treasury, is a recent Gourmet Traveller Hotel of The Year, expectations are suitably heightened. Post, thankfully, delivers. Based in the space that once housed Perth’s first general post office, this cool room of blond timber, white walls and black steel elegantly refutes the notion of cookie-cutter hotel dining. Exhibit A: raw kingfish served with green tomato and a buttermilk vinaigrette, one of the menu’s many health-conscious options. Elsewhere: a rich brick of cocoa, muscatel and almond is cleverly played off against grapes and berry sorbet. Healthy chocolate? Perhaps. It’s not all spa cuisine, though. Buffalo burrata with peaches is summery joy while lamb backstrap with black olive crumbs and a smoked tomato purée is a study in hearty cooking.
