The Fish House could coast by on the view alone: its front windows, usually open, overlook the sweep of the Gold Coast; in the distance the skyscrapers of Suerfers Paradise rise from the blue water like Emerald City. Burgers and watered-down soft drinks would make a killing. Instead, chef Damien Styles doubles down on elegance.
Start with freshly shucked oysters or a prawn cocktail. Your hardest choice will be which stunningly fresh fish you’d like for your main course: perhaps fried baby snapper in a pool of nahm jim, topped with an Asian herb salad? Or boarfish, its flesh flaky and sweet, grilled with herbs and lemon. Al meals come with roasted potatoes, vegetables and a vinegary cos salad, and somehow the gracious staff manage to make even this family-style format seem refined. This isn’t a place that’s resting on its laurels – the location is just a bonus.
