Building on the fine wine and food-matching credentials of its ground floor bar and cellar restaurant, Apothecary 1878 has converted its stately upstairs lounge into The Dispensary, Adelaide’s first Champagne bar. Open Friday and Saturday nights from 5pm, it houses a huge list of Champagne houses and vintages, with a host of élite wines available by the glass and bottles of Billecart and Louis Roederer, among others, starting at $99. Apothecary owner Paola Coro has long wanted to establish this permanent bar, having hosted extensive annual Champagne tastings, and adds a dash of panache to proceedings, with staff theatrically opening bottles of Champagne with sabres.
