Much more than a meal, the Spirit House is like a mini-break in steamy South East Asia. Follow the torch-lit boardwalk through lush rainforest, past the Buddha statues to a series of dining pavilions hidden around a lake. By day, birdsong provides a natural soundtrack, giving way after dark to a chorus of frogs. Pungent scents of chilli and coconut curry tease the tastebuds, and when the green curry arrives with hunks of tender braised beef and a crisp-coated beef and black rice spring roll, the beautifully balanced, bold flavours make good on the promise of the seductive surrounds. An entrée of wok-seared scallops is more restrained, served with al dente slivers of baby corn, fresh coconut and a smattering of chilli salt. Perhaps best of all is a punchy ginger brûlée with macerated strawberries, tart yoghurt sorbet and Thai basil. Proficient service keeps the five-star resort vibe going, as does a wine list with global reach.
