Some call mushrooms the meat for vegetarians. We just think they're a delicious and versatile fungi. Cook them fast with asparagus in a Chinese stir-fry, or braise them slow with chillies and Sichuan pepper; or red wine and marjoram, served with polenta. And butter, of course, makes everything better. For a next-level brunch, make the buttered mushrooms or Jacques Reymond's baked 'shrooms with hazelnuts and golden shallots, or do like Peter Gilmore does, and grill up some shiitakes with a slather of umami butter.
