Rice is nice. Risotto is even nicer.
Risottos are just about the best dishes you can cook in one pot. There are a few golden rules: keep the stock hot; stir the liquid into the rice, one ladleful at a time; and make sure the rice is al dente, never soggy. Finish with a generous dollop of butter, mascarpone or crème fraîche, and above all, don't forget the parmesan.
